Here’s another favorite of mine, for those who love a sweet and succulent tomato flavour: Angel Noodles with Sweet Tomato Ginger Sauce.
First, for this delicate cut of noodles, you will need a veggie spiralizer. Just make sure you are at the ‘Angel Hair’ setting. It can be quite exciting to see those pretty strands come out if you are spiralizing your zucchini noodles for the first time.

For the sauce, you would want to use a good source of raw organic medjool dates, soft and sweet.
And let’s load them up into a blender.
And what a pretty sight on top.
Now let’s light them up! The sweet tomato ginger sauce.
Plate your Angel noodles on a bed of Asian Mixed Greens, and top with some delicious Sweet Tomato Ginger Sauce. And taebak!

This is one of my personal favourites as well because of it’s refreshing and sweet taste. I find that the ‘Angel’ cut for the Zucchini Noodles go best with this sauce. Also, if you find yourself working with a lot of nuts in your cream sauces most of the time, then this Sweet Tomato Ginger Sauce is a great alternative. Raw nuts are great, but too much of a good thing is not advisable as well. So do experiment with your sauces and you will be surprised to see what you can come up with as well.
